I would say the Midnight Luxe would likely be liked by more people as it is a true medium feel.  You still have good pressure relief but without sinking in too far.  The Sunset luxe will be liked by people who like soft.  Or lighter side sleepers since they have less weight the softer feel could be better for them to get pressure relief they need.
